This is a meze, or appetizer, from the island of Crete composed of tomatoes, olives, feta cheese and fresh herbs.
Ingredients
- Barley Rusk, halved2 rolls
- Tomatoes, diced2 pieces
- Feta Cheese200 grams
- Olives, pitted and chopped25 pieces
- Extra Virgin Olive Oil1/4 cup
- Fresh Parsley, chopped5 sprigs
- Fresh Oregano, chopped5 sprigs
Directions
- Step 1Combine the tomatoes, olives, olive oil and herbs in a bowl and mix well.
- Step 2Coat the top of a halved barley rusk with olive oil.
- Step 3Place the tomato and olive mixture on the barely rusk.
- Step 4Crumble feta cheese on top.
- Step 5Garnish with additional herbs and a drizzle of olive oil.
Chef's notes
- The better the olive oil, the better the final product. When buying extra virgin olive oil, look closely to see the olives are only sourced from one location. Olive oils with olives sourced from multiple countries is usually a bad sign.
- If you prefer a slightly less crunchy texture, let the prepared dish sit for 5-10 minutes to allow the barley rusk to soften a bit before serving.
