This is a meze, or appetizer, from the island of Crete composed of tomatoes, olives, feta cheese and fresh herbs.

Ingredients
  • Barley Rusk, halved
    2 rolls
  • Tomatoes, diced
    2 pieces
  • Feta Cheese
    200 grams
  • Olives, pitted and chopped
    25 pieces
  • Extra Virgin Olive Oil
    1/4 cup
  • Fresh Parsley, chopped
    5 sprigs
  • Fresh Oregano, chopped
    5 sprigs
Directions
  • Step 1
    Combine the tomatoes, olives, olive oil and herbs in a bowl and mix well.
  • Step 2
    Coat the top of a halved barley rusk with olive oil.
  • Step 3
    Place the tomato and olive mixture on the barely rusk.
  • Step 4
    Crumble feta cheese on top.
  • Step 5
    Garnish with additional herbs and a drizzle of olive oil.
Chef's notes
  • The better the olive oil, the better the final product. When buying extra virgin olive oil, look closely to see the olives are only sourced from one location. Olive oils with olives sourced from multiple countries is usually a bad sign.
  • If you prefer a slightly less crunchy texture, let the prepared dish sit for 5-10 minutes to allow the barley rusk to soften a bit before serving.
